Crispy Smoked Chicken Wings

The secret to perfect smoked wings? They need to be crispy AND smoky. Most smoked wings come out with rubbery skin. Not these. Here's the method that gets you both.


The Secret: Baking Powder

The #1 trick for crispy smoked wings: toss them in baking powder before smoking. Baking powder raises the skin's pH, which helps it dry out and crisp up at lower temperatures.

Important: Baking POWDER, not baking SODA. Baking soda will taste metallic and terrible.


Ingredients

  • 3 lbs chicken wings (flats and drums separated)
  • 1 tbsp baking powder (aluminum-free)
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • For Buffalo Sauce

  • 1/2 cup Frank's RedHot
  • 4 tbsp melted butter
  • 1 tbsp honey
  • 1 tsp garlic powder
  • For Dry Rub (Alternative)

  • 2 tbsp Meat Church Holy Voodoo
  • 1 tbsp brown sugar

  • Step 1: Prep

  • 1.Pat wings completely dry with paper towels (this is critical)
  • 2.Toss wings with baking powder until evenly coated
  • 3.Add salt, pepper, garlic, onion, and paprika
  • 4.Place on a wire rack over a baking sheet
  • 5.Refrigerate uncovered for 2-24 hours (overnight is best)
  • Why Uncovered? This dries out the skin further, which = more crunch.


    Step 2: Smoke (1 Hour)

    Temperature: 225-250°F

    Wood: Cherry or apple (mild and sweet)

  • 1.Place wings directly on grill grates
  • 2.Smoke for 60 minutes at 225°F
  • 3.Don't flip — let smoke work its magic
  • 4.Wings should hit about 140°F internal

  • Step 3: Crisp Up (20-30 Minutes)

    This is where the magic happens. Crank the heat.

    Option A: High-Heat Finish on Grill

  • 1.Increase grill temp to 375-400°F
  • 2.Cook 20-30 minutes, flipping once
  • 3.Skin should be golden and crackling
  • Option B: Deep Fry Finish

  • 1.Heat oil to 375°F
  • 2.Fry wings 3-4 minutes until crispy
  • 3.Maximum crunch, but more cleanup
  • Option C: Air Fryer Finish

  • 1.Air fry at 400°F for 8-10 minutes
  • 2.Flip halfway
  • 3.Great compromise of crunch and ease

  • Step 4: Sauce or Season

    Buffalo Wings

  • 1.Melt butter in saucepan
  • 2.Add Frank's RedHot, honey, garlic powder
  • 3.Toss wings in sauce immediately after cooking
  • 4.Serve with blue cheese (not ranch — this is non-negotiable 😤)

  • 1.Toss hot wings in additional dry rub

    1. Buy Whole Wings and Cut Them

    Cheaper and you get better quality. Cut at both joints, discard (or stock) the tips.

    2. Don't Crowd the Grill

    Wings need airflow for crispy skin. Give them space.

    3. Internal Temperature

    Chicken wings are best at 175-185°F internal — higher than breast meat. The extra fat and collagen in wings need more heat to render properly.

    4. Make Extra

    You will always want more wings than you think. Plan 1-1.5 lbs per person.
