What Is the Reverse Sear?
The reverse sear is exactly what it sounds like — the reverse of how most people have been taught to cook a steak. Instead of searing first over high heat and then finishing in the oven (the traditional method), you cook low first and sear at the very end.
The technique was popularized by food science writer J. Kenji Lopez-Alt and has since become the go-to method for serious home cooks and even many professional chefs. Once you understand why it works, you'll never go back to the old way for thick steaks.
Why It Works: The Science
The Problem with Traditional Searing
When you throw a cold, thick steak onto a screaming hot pan, the outside starts cooking immediately while the interior is still cold. By the time the center reaches your target temperature (say, 130°F for medium-rare), the outer 1/4 to 1/2 inch of meat has been blasted well past medium-rare. You get a gray band of overcooked meat surrounding the pink center.
With a thin steak, this doesn't matter much — there's not enough mass for a significant gradient. But on a thick-cut ribeye or tomahawk, the gray band can be substantial. You end up with maybe 40-50% of the steak at your desired doneness and the rest overcooked.
How Reverse Sear Solves This
By cooking the steak slowly at a low temperature first (225-275°F), the heat has time to penetrate evenly from edge to center. The temperature gradient across the steak is very gentle. When you pull the steak from the low-heat phase, the interior might be 115-120°F and the exterior might be 125°F — very close to each other.
Then you hit it with blazing heat for a very short sear. Because the steak is already almost at your target temp internally, the sear only needs 60-90 seconds per side — just enough to develop the crust without cooking the interior further. Better Crust, Too
Here's a bonus most people don't expect: the reverse sear actually produces a better crust than traditional searing.
Why? Moisture is the enemy of browning. The Maillard reaction (the chemical reaction that creates that savory, caramelized crust) doesn't really kick in until the surface temperature exceeds 280°F. But surface moisture keeps the temperature at 212°F — the boiling point of water. You have to drive off that moisture before browning can begin.
During the low-heat phase of the reverse sear, the steak's surface slowly dries out. By the time it hits the searing surface, there's very little moisture to overcome. The crust forms almost instantly, and it's darker, crunchier, and more flavorful than what you'd get from searing a cold, wet steak.

What You Need
Step 1: Season and Temper
Season the steak generously with kosher salt and black pepper on all sides. If possible, salt the steak and place it uncovered on a wire rack in the fridge for 12-24 hours before cooking. This dry-brining process seasons the steak deeply and dries the surface for a better crust.
If you don't have time for overnight dry-brining, season the steak at least 40 minutes before cooking. There's a window between 3-40 minutes where the salt draws moisture out but hasn't been reabsorbed yet — your surface will be wet and won't sear as well. Why pull 10-15 degrees early? The sear will add about 10-15°F of internal temperature, and there will be some carryover cooking during the brief rest.
Timing: For a 1.5" steak at 250°F, expect about 45-60 minutes to reach 115°F (for medium-rare). A 2" tomahawk might take 60-90 minutes. Don't go by time — go by temperature.
Step 3: Rest (Brief)
When the steak hits your pull temperature, remove it from the oven/smoker and let it rest for 5-10 minutes while you heat your searing surface. This short rest lets the internal temp equalize. Some people skip this rest entirely and go straight to the sear — that works too, but resting gives you a slightly more even result.
Step 4: The Sear
This is the money step. You need extreme heat and you need it fast.

If searing on a grill, get it as hot as possible. Open all vents on charcoal, or crank a gas grill to maximum. You want grate temperatures of 600°F+. Sear 60-90 seconds per side. This method gives you grill marks but less overall crust surface than a flat cast iron pan.

Let the steak rest for 5 minutes after searing. Because the steak was cooked gently and is already mostly at equilibrium temperature, it doesn't need a long rest — the juices have already redistributed during the low-heat phase.
Slice and check your work. You should see even pink (or red) from edge to edge with a thin, dark, crunchy crust on the outside. No gray band.
Common Mistakes
Steak Too Thin
If your steak is less than 1.25 inches thick, the reverse sear isn't the right technique. The interior cooks too fast in the low-heat phase and you lose the advantage. Use a hot, fast sear for thin steaks.
Not Getting the Pan Hot Enough
If the pan isn't screaming hot, you'll spend too long searing and overcook the exterior. That cast iron should be pre-heated for a full 5 minutes on the highest burner. It will smoke. That's fine. Open a window and turn on the vent hood.
Using the Wrong Oil
Butter and olive oil have low smoke points (around 300-350°F). They'll burn before the pan is hot enough for a proper sear. Use avocado oil for the initial sear, then add butter at the very end for basting when the pan has cooled slightly from the steak absorbing heat.
Skipping the Thermometer

Cooks the steak in a precisely temperature-controlled water bath (typically in a vacuum-sealed bag) for 1-4 hours, then sears. The result is extreme precision — if you set the bath to 130°F, the steak will be 130°F edge to edge.
Trade-offs
Both methods are excellent. If you own a smoker, the reverse sear is the way to go — the smoke plus the sear is unbeatable. If you want absolute precision and don't care about smoke, sous vide is a great option.
